Creamy Italian risotto made with Arborio rice, saffron threads, and often paired with seafood, such as shrimp or mussels.

Ingredients

1 1/2 cups Arborio rice
4 cups chicken or vegetable broth
1/2 cup dry white wine (optional)
1 small onion, finely chopped
2 cloves garlic, minced
1/4 teaspoon saffron threads
2 tablespoons unsalted butter
2 tablespoons olive oil
1/2 cup freshly grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, for garnish

Instructions:

1. Infuse the Saffron:
In a small bowl, crumble the saffron threads and soak them in 2 tablespoons of warm water. Allow them to steep while you prepare the risotto.

2. Sauté the Aromatics:
In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the finely chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

3. Toast the Rice:
Add the Arborio rice to the pan and cook, stirring constantly, for 2-3 minutes until the rice turns slightly translucent.

4. Deglaze with Wine (optional):
Pour in the white wine, if using, and cook until it’s mostly absorbed by the rice, about 2 minutes.

5. Start Adding Broth:
Begin adding the chicken or vegetable broth, one ladle at a time. Stir the rice constantly and allow the liquid to be absorbed before adding more. Continue this process until the rice is al dente, which should take about 18-20 minutes.

6. Infuse with Saffron:
About halfway through the cooking process, add the saffron and its soaking liquid to the risotto. This will infuse the rice with the saffron’s beautiful color and flavor.

7. Finish and Season:
Once the rice is creamy and al dente, remove it from the heat. Stir in the remaining tablespoon of butter and the freshly grated Parmesan cheese. Season with salt and pepper to taste.

8. Serve:
Serve the saffron risotto immediately, garnished with fresh parsley. Enjoy the luxurious flavors and vibrant colors of this saffron-infused delight!
